Gingerbread Wreath Cake DIY for Christmas

Who says you can’t have your cake and a cookie too? I say let’s make a cake and decorate it with cookies for Christmas! How about a Gingerbread Wreath Cake? It’s super pretty, festive and delicious, too.

How to make a Gingerbread Wreath Cake

Whatever order you bake your cake and cookies in doesn’t matter. We did it over the course of two days so everything had plenty of time to cool and chill.

Gingerbread is so delicious when it is freshly baked. Forget about those store-bought cookies. These will make your house smell AMAZING. After you’ve made your dough, chilled it, rolled it out and cut your leaves, take a toothpick and lightly draw in some veins to make your leaves look more real. You could do this with royal icing too but we liked the less sugary route for this cake.

And speaking of cake, we cannot recommend the olive oil cake enough. It is so good and the orange goes really well with the gingerbread and chocolate glaze.

Once everything is baked and cooled, it’s time to assemble. Assembling a Gingerbread Wreath Cake

Assembling the cake: We laid out leaves on the bottom of our cake stand. Then gently set the cake on top. We poured the chocolate glaze into the center of the cake (we made two layers but you could do this with one) and let it drip down the sides a bit. Then we gently laid more gingerbread leaves along the top of the cake in a round circle like a wreath. We used toothpicks to keep the leaves from sliding off the cake while the glaze hardened.

After a few minutes the glaze will be hard enough to keep the cookies in place. Decorate your cake with a few cinnamon candies and you are ready to serve!

It’s almost too pretty to eat! But don’t worry, you’ll get over that. And don’t stress about the cookies getting in the way of cutting a slice either. Just let them fall apart beautifully. Nobody will complain.
